Most ppl in my system who do iron palm training don't start until they've had at least 4-5 years of traditional kung fu training. Even then, not everyone is asked to train it. Dedication to the art is a significant criteria; not a single day of training can be skipped. Then there is suitability for the training -- ppl with health problems or injuries to the hands/arms, or even prior internal injuries, have to be cleared for the training. Very few women are trained in it (not sure why; it may just be "tradition" not to train women, but a part of the initial training seems to be to increase testosterone levels). The herbs used in the jow (liniment) can be harmful.
IMO supervised training is essential to do it safely.
