Rep Power: 4 | | | Rice I'm surprized that no thread is just about rice. So here it is, post everything you know, like, or other various information concerning rice. Recipes are welcome as well as opinions towards nutrition as well as favorite varities of rice. Here I'll start it off with a recipe I like.
1 cup Basami rice
1.5 cups water
Boil for 20 minutes
Add butter as desired and let sit for a little bit. Add soy sauce for flavor.

Rep Power: 153 | | | Finding out about different textures of rice is interesting. I have 3 or 4 kinds of rice at home all the time, usually one of these types:
Long-grain white rice
Long-grain jasmine rice
Long-grain brown rice
Medium-grain Nishiki rice
Short-grain brown rice
Brown glutinous (sweet) rice
White glutinous (sweet) rice
Honeybunny makes an aromatic rice using either white or jasmine rice. He heats the water to boiling, adds the rice, brings it back to boiling, & throws in fresh Thai basil, rosemary, regular basil & a little sesame oil, turns off the heat & covers the pot.
The medium-grain Nishiki rice cooks up almost as thick as bread, so a little goes a long way. I like it just with a little soy sauce, maybe some sesame oil. If I'm hungry I'll have veggies & chicken on the side but this rice fills you up fast.
The brown glutinous rice I like better than regular brown rice. It's not quite as sticky as the white glutinous rice so it doesn't work as well in recipes like steamed rice in lotus leaf. But it is good as a side dish and has a nutty flavor. (It's available at World Foods in the bulk section BTW)
White glutinous rice ("sweet rice") is the rice for "shaped" recipes as it is super-sticky. Has to be soaked in cold water overnight. Then steamed for about 1.5 hours.
With sweet rice you can make lotus or bamboo leaf wraps. Soak the dried leaves in hot water just before filling them. In a lotus leaf wrap, just spoon the steamed sweet rice into the center, make an indentation, fill that with goodies like chinese sweet sausage, boiled egg, pork, chicken, etc. Wrap the leaf tight and tie with butcher string. Steam for 1-2 hours. In a bamboo leaf wrap (these are often made just for August Moon festival), place a little sweet rice in the middle, fill that with tiny dried shrimp, minced sausage or other meat (or just mix it into the rice first), wrap the leaf up into a triangle, tie with string, and boil in a big pot of water for 2 hours. (The bamboo leaf holds much less filling & is much more annoying to wrap up, probably why it's only made on holidays.) The leaves make the rice very fragrant.

I don't eat it that much but I would definetly like to cook with it more. Maybe we'll see some good recipes here.

There are pleanty of places to find good rice. Hey that raises another question. Where does everyone get rice? I go sometimes to an oriental market or whole foods store, but what places have the best and widest variety of rice?

Ha! One of the guys I live with eats Uncle Ben's wild rice all the time. You know the stuff that cooks in like 7 minutes? It is pretty good I have to admit...but it is no substitute for the short grain brown.

Fry up an omlette and drop in top of a big pile of steamed rice... doesn't get much more simple than that, and it tastes GREAT!
