Rep Power: 153 | | | Things to do with leftover corned beef... OK, St. Patrick's Day is more than a week past, but we still have a fridge full of corned beef... and we're all out of cabbage. So its been "leftover corned beef week" every night. Here's what I've learned:
Cold corned beef sandwiches = meh
Hot corned beef sandwiches = yum
Fried potatoes & corned beef = yum
Running out of sandwich bread =
Kraft mac&cheese mixed with corned beef =
Any other recipe suggestions would be welcome.

Rep Power: 62 | | My favorite thing to do with leftover corned beef is to pick it up with my hand and stuff it into my mouth as quickly as possible. Its more satisfying that you might think.
To be slightly more serious, my address is in the DL Meet thread. You could always ship your leftovers to my place and Ill be sure to annihilate them in short order.
To tread into near serious territory, I think the best way to eat leftover cornbeef if you have no bread left, and you dont want to be a barbarian as noted above, a little bit of Grey poupon goes a long way in eating plain cornbeef. |

Rep Power: 36 | | | You can mix up that corned beef in the skillet with some chopped onion, refried beans, and a little salsa for some quick tacos, you'll need tortillas, of course. That would be the Texan approach.
Or, you can saute it with a little garlic, onions, and some cheap, store-bought pasta sauce to make, well...pasta sauce. |

Well except with mac& cheese/corned beef. Hot sauce does not go with that. Trust me.

It is food -- just really high in saturated fats & salt. It's just another kind of cured meat, really. So if you eat salami or bologna, corned beef is in that group.
Now Spam, on the other hand -- that's nasty.

First thing to come to mind is corned beef hash. Never made it myself cause I didn't get to that point of leftovers, lol. I'l go for a corned beef omelet before hashing. Anyhow, I spotted what looks like a basic recipe on the first pass at Google. http://www.briansbelly.com/recipes/b...beefhash.shtml
I wouldn't go for the hot sauce myself, but each to his own. Some diced green pepper is a nice touch, and is commonly used in home-made varieties of this genre.
