Rep Power: 17 | | | yeah so... my ac is broken and its 92 degrees in my house. so instead of baking some chicken breast today in oven for dinner i fryed in in olive oil. is that bad? =/

Rep Power: 39 | | | Properly done yes and no. Olive and canola oil are said to be the best choices. Really if you breaded it or not as long as you let the oil get hot before you fried it, 300 degrees or so, when the chicken hits the oil the moisture in the chicken will keep the oil from seepng into the chicken meat. This is because lips (fats) can be called hydrophobic so water and fats (oils included) so very little actually penetrates the meat. Also let the chicken rest this will let any oil in the breading or on the meat to drip off. Now of course there is more sat. fats and so forth that will be in and on it no matter what but its not nearly so bad if its cooked right. |

OT- Sounds like we're in the same (very hot) boat! We just replaced our ENTIRE AC 2 years ago (inside and out) and it DIED.

extra virgin cold pressed is a definite no no when it come to frying
cos it burns too easy

Rep Power: 149 | | It was really a bit warm today. Almost 70.
Actually it's gonna be 91 on Sunday and because A/C is still not ubiquitous in the northeast it will be hot everywhere except maybe the mall. It'll be a good test of our basement apt. though. I think it will maintain a pretty comfortable temperature.
