Rep Power: 20 | | | tired of making the same blah meals all the time. Hey, I know this is a loaded question especially with this whole space being for healthy eating, but I'm getting really tired of making the same blah meals all the time.
I am really not much of a chef as I haven't had much experience with cooking, but I can follow a recipe! (i just learned how to make mashed potatoes last month) I just don't have the knowledge.
I have a child who is a really good eater, and a boyfriend who is not. He wants to start eating veggies but he mostly eats chicken or steak with the closest thing to veggies being french fries.
He really likes meat and I really like simple ingredients and not too long to make foods, that are tasty. We aren't able to keep a lot of stuff fresh in the house unless its frozen, we just don't cook much aside from meat (from frozen) and fries.
We need to start saving money and eating out less so I need to start cooking at home but I really have no knowledge of what/how to cook.
So I guess all I'm asking is if you could give some simple recipes for yummy healthy meals!

you don't have to be on a diet to eat them. It's just really healthy good food.

don't worry, it's not icky diet food. You can probably even find some of the recipes on line.

I cook a lot of stir fry veggies and one-pot meals. My hubby has actually been teaching me to cook outside the "mac-n-cheese" spectrum.
One favorite is modified jag: Cook some white rice (or brown if you want). Slice up some linguica (or any spicy sausage) and brown in a big skillet. Add a can of beans (red, kidney, black-eyed peas, etc.) and about a half cup of chicken broth, and heat. Turn off the heat and throw the rice in with it and stir well.
I also make baked summer squash which may be in the SBD cookbook too: Slice up an equal amount of yellow squash and zucchini. Layer in a baking pan with fresh garlic, italian seasoning, black pepper and grated parmesan. Put in a 400 F oven for about 30 minutes.

Rep Power: 0 | | | My husband and I are trying to increase the veggies in our diets and cut back on the unhealthy foods too. Our 2 year old loves veggies! Don't know where she got it from. We're both horrible at dieting, so we're just trying to gradually modify our diets. I found really tastey recipes on atkins.com. They're free, there's a big variety, and you can look at recipes from every stage in their diet plan (pretty similar to the South Beach Diet). I try to pick one or two new ones to try each week. I tend to substitute frozen foods for fresh ones too. |

Spagetti Squash is pretty good. I boil it until it is easy to push a fork through the skin, scoop all the squash into a container and mix in spagetti sauce. Refrigerate it for a day or two. Then, pop it in the microwave and eat. Even my husband will eat it then. |
